Meat Free Monday

on
Monday, 6 October 2014

In a bid to try and post more about food I thought I would attempt to post something each week for Meat Free Monday. The weekly event is about encouraging people to skip meat for one day each week. Even though I skip meat every day, I thought it would be a good weekly point to get me posting more.

So here was my dinner from tonight. I made the very simple, but delicious roasted sweet potatoes with humous, roasted chickpeas, salad and peppers. It's also an attempt at me trying to get my eating back on track to three proper meals a day. Yesterday I only ate a bagel and some toast which isn't exactly the healthy diet I should be on, even if my eating habits were completely influenced by my hungover state.

So here's to trying to eat healthy and getting into some sort of decent shape.

Classic Waffles

on
Monday, 30 June 2014

Most people seemed pretty surprised when I got a waffle maker for my birthday back in January, but it turns out there's plenty of ways to make waffles without using any animal products. I ran out of sugar when i made these, so ended up using agave syrup instead and it ended up making them a lot fluffier than usual.

This is the recipe I use to make classic waffles, but you can easily add coconut or frozen blueberries to the mixture to make it a bit different.

Ingredients
1 cup organic flour
1 1/4 tsp baking powder
1  tbsp egg replacer
1 cup coconut milk
2  tbsp agave syrup
3 tbsp melted vegan margarine
A pinch of salt
3 tbsp vegan cream cheese
2 tbsp icing sugar

1. Preheat the waffle maker

2. Mix the vegan soft cheese and icing sugar together until smooth.

3 In a bowl mix the flour, agave syrup, salt, egg replacer and baking powder together.

4. Whisk in the coconut milk.

5. Melt the butter in a pan and whisk into the mixture.

6. Pour the mixture into the waffle maker for two minutes.

7. Remove and add toppings! I personally think cream cheese is the best with some frozen blueberries, fresh berries and chia seeds.

Enjoy!

Mayim's Vegan Table - Chocolate Oatmeal Cookies

on
Sunday, 18 May 2014

So after months of flicking through various vegan cookbooks in the shops, I've finally found one that's full of recipes i actually want to make. A lot of the books i'd previous seen were just full of different types of salad, but Mayim's one includes some of my favourite foods like macaroni cheese and shepherd's pie. There's even recipes for pancake batter and french toast to doubt the people who think we need eggs and milk to make a good breakfast.

I decided to jump straight to the dessert section at the back of the book, and made a batch of oatmeal cookies with chocolate chips. I don't think the photo does them justice, but they really were delicious. And i hadn't used all my oats making them, then i'm pretty sure i'd be making another batch just now.

There's so many great recipes in the book and i'm already planning to eat mac n cheese for dinner most nights next week. There's also a great chocolate fudge cake recipe, and a few new options for breakfast smoothies,

The book has also has great information about what meat and dairy does to your body, as well lots of information on vegan alternatives to all the food you think you'll miss. If you're looking for a vegan cookbook that covers a wide variety of food, then this is the one to get. Even if you're not-vegan but trying to eat a bit healthier, then you're bound to enjoy all the recipes too.
